I’m always trying out new fun things and cookies are usually at the top of my list. They are super easy and my kids can helps or I can quickly whip them up during homeschool for my kids to enjoy. I usually do them from scratch but have seen lots of ways to use cake mix to make them. And well I just had to try them. But I didn’t want any basic ole cookies. If I’m going to simplify a cookie recipe to coming from a box of cake mix I’m going to have fun with it too.
So I decided to go with a strawberry cake mix. Add in some while chocolate chips. My kids love white chocolate more than regular chocolate like their mama. And then because I wanted them to be Valentines themed I decided to toss in some conversation hearts too. Because well why not… the fun part about making holiday themed cookies is all the festive ingredients.
These cake cookies will expand a ton but that’s ok. They will still be soft and delicious! Be sure to use the measurements I share below instead of the ones on yours box. We them cookie formation and not a cake. Unless you plan to do this as cupcakes which would work too with chocolate chips and conversation hearts. So let’s get to this simple and yummy recipe.
Ingredients
- 1 Box Strawberry Cake Mix
- 1/2 cup Vegetable Oil
- 2 Eggs
- 1 cups White Chocolate Chips
- 1 cup conversation hearts
Directions
- Preheat your oven to 350 degrees.
- Mix together cake mix, vegetable oil, and eggs in a large bowl until combined using a hand mixer.
- Mix in white chocolate chips and conversation hearts and then stir until evenly mixed.
- Place spoonfuls onto an parchment lined cookie sheet about 2 inches apart.
- Bake for 12 to 15 mins.
- Leave on the pan for 2-5 mins then transfer to a wire rack for cooling.
- Enjoy!
They don’t need to be perfect round balls. They are going to expand a good amount so place them about 2 inches apart maybe even more.
